Kids Favorite! - Easy Hash Brown Soup Recipe




This is a super yummy meal that kids love to prepare.  Since it uses frozen hash browns, it's really simple and fast to make.

Ingredients:
  • 1 onion , chopped
  • 1 tablespoon butter
  • 3 (14 ounce) cans chicken broth
  • 1 (32 ounce) bag frozen hash browns
  • 1 can cream of celery soup
  • 1 can cream of chicken soup
  • 1 1/2 cups milk
  • 1 cup cheddar cheese, grated
  • 1/2 teaspoon ground black pepper
  • 8 bacon strips, cooked and crumbled
  • Sour cream ( optional)
Directions:
  1. In a large saucepan or stockpot, on low heat, melt the butter and sauté the onions till browned.
  2. Add the chicken broth and bring to a boil.
  3. Mix in the hash browns, stirring well.
  4. Add the cans of soup, milk, cheese, and ground black pepper.  Simmer on medium heat until it starts to boil.
  5. Carefully pour into individual soup bowls, and garnish with crumbled bacon, sour cream and additional grated cheese, if desired.  Enjoy!

  1. yum... love hash browns.. and I also recently went for a cooking class that had hash brown with a minestrone soup!
